Title continues: A Complete Cookery Book, with sections on the housewife, household work, servants' duties, labour-saving, laundry work, etiquette, marketing, carving and trussing, the art of "using-up", household hints, table decoration, the home doctor, the nursery, the home lawyer, etc. With 16 plates in colour and nearly 350 illustrations. 8vo; maroon cloth-backed pale grey cloth over boards, lettered in black on spine; pp. xvi + 1680; adverts.; plates, some of which in full colour. Joints and extremities a little rubbed; light soiling to boards; corners slightly turned; hinges starting; earlier owner's hand-stamp to title page; scattered foxing. Good condition. 'In her biography of Mrs. Beeton entitled "Mrs. Beeton and Her Husband" (Collins, 1948), Miss Nancy Spain gives the lie direct to those who persist in deriding the Mother of English Cookery. Mrs. Beeton did not say "Take ten eggs" or "First catch your hare." And to accuse her of extravagance is ridiculous. Mrs. Beeton's "Househould Management" was originally composed to meet a demand for economy and efficiency in the kitchen, and no cookery book ever contained more recipes for the general public. Equally false is the idea that Mrs. Beeton's recipes have "dated." It is sometimes said that "things were different in her days," but the difference was of degree, not of kind. Food commodities may vary in availability, but not in substance or culinary potentialities; and the fiction that Mrs. Beeton based her work on the assumption of unlimited quantities is utterly remote from the facts. Economy, the avoidance of waste, and the maximum saving of labour were cardinal points in Mrs. Beeton's unique system. The aim of her book was to show how to get the most out of everything, variety in menus depending on culinary skill rather than unlimited choice of raw materials. These can hardly be considered anachronisms to-day.'.
