Some have set up their own traditions, but Londoners, including the legendary - and still flourishing - Cockney, have absorbed most of them - and their cooking. Thus the food of London derives from many places. The author has mingled London's history with many excellent dishes, ranging from the foods made famous by chefs such as Soyer of the Reform Club to the humbler boiled beef and carrots.
