This set contains: Volume one, featuring ancient and historical baking techniques, bread laws, wheat and natural cereals, flour, yeast and fermentation, and bread making. Illustrated with a coloured frontispiece and thirteen plates, two of which are coloured. Volume two, featuring special British classes of bread, continental bread, yeast food and bread-improves, chemical aerating agents, confectionery materials, and confectionery goods. Illustrated with a coloured frontispiece and eighteen plates, one of which is coloured. Volume three, featuring fermented buns and cakes, chemically altered goods, icings and syrups, pasties and pastries, biscuits, slab cakes, and the ornamentation of cakes. Illustrated with a coloured frontispiece and twenty-one plates, six of which are coloured. Volume four, featuring ornamental confectionery, sweets and entremets, ices, and menu dishes. Illustrated with a coloured frontispiece and fourteen plates, four of which are coloured. Volume five, featuring menu dishes, light refreshments, outside catering, restaurant catering, and bakery fixtures and fittings. Edited by John Kirkland, a British writer and the Head Teacher at London's National Bakery School. It is possible that Kirkland is one of the Kirkland brothers. The Kirkland brothers owned 'Liverpool Vienna Bakery Kirkland Brothers' in Liverpool, a popular bakery which supplied the royal family with baked goods when they visited Liverpool. In the original pictorial green cloth binding. Externally, smart with rubbing and light bumping to the extremities. Fading to the spine with light discolouration to the boards. The odd small mark to the boards. Internally, firmly bound. Pages are very bright with light scattered spotting and the odd handling mark. Further spotting to the endpapers with light age toning.
