The Chinese Committee, International Institute Y. W. C. A. Honolulu, Hawai
Chinese Home Cooking Recipes of Cantonese Dishes
Honolulu, Hawaii, Paradise of the Pacific, Ltd. 1945. Second edition (first published in 1941); 9 1/4 x 6 1/4; pp. [12], 9-86, [54]; light-brown leatherette over boards, printed with Chinese characters in dark-brown; illustrated with frontis plate, several photographs, and numerous advertisements; small signature of previous owner to ffep; a bit of wear to corners and tips of spine; in very good condition. A great community cook book, it was prepared by the Chinese Women's Club of the International Institute to raise funds for national and world support of the Y.W.C.A. In addition to the variety of authentic Cantonese recipes for soups, seafood, noodles, dumplings, etc. it also included a section on table etiquette (no used chopsticks on the table cloth; no young people are served, until the elder persons have received their servings; no one, but the honor guest is seated facing the door; etc.). The last chapter contained a large table of ingredients, identified by their Chinese names, their transliterated forms, their English equivalent, and how they were sold (in bulk, in bottles, in strings, and so on). Very good .
